This Summer Strawberry Jam is the perfect start to a Summer's day, having breakfast outside with some freshly baked homemade bread! This recipe can be used for raspberries or loganberries.

Method

  1. Crush the strawberries with a potato masher or in a liquidiser and place them into the saucepan.

    • 800g Strawberries
  2. Add the jam sugar and heat gently whilst stirring continuously until the sugar dissolves. Do not boil at this stage.

    • 1kg Silver Spoon Jam Sugar
  3. Add a knob of butter. Keep stirring, increasing the heat bringing it to a full rolling boil, that bubbles vigorously, rises in the pan and cannot be stirred down. Once it gets to this point start timing and boil for 4 minutes only.

  4. Remove from heat, working quickly, pot into warm jars and cover.

    A great recipe, made 2 jars today with fragrant Scottish raspberry’s, and it has a great flavour. Would recommend others to try this its really easy to do. Just make sure you heat your jars because you are pouring into immediately.
