<h3>How can I make my scones rise higher?</h3>
To make your scones rise higher, you will want to keep your dough a thick depth when pressing into shapes with your cutter. Chill your bowl, pastry cutter and butter before using them to help with a good rise. You can even chill your scones on the baking tray in the fridge for 15 minutes to give a fluffy texture when baked (plus this is a great opportunity to preheat your oven).
When placing the scones on your baking tray, squish them together (similar to when baking cinnamon rolls), as when they bake they will rise together and have lovely soft sides when pulled apart.&nbsp;
<h3>How to bake light, fluffy scones</h3>
There are a few potential reasons your scones aren’t coming out as light and fluffy as you may like.
One common mishap is over-mixing; you want to mix your ingredients until they just come together, a few lumps in the mix are to be expected. It’s also worth mixing the dry and wet ingredients together in separate bowls before combining.
Try to mix your scone dough by hand as using a food mixer, while convenient, can result in over-mixing. It is also worth spending time to sieve your flour once (maybe even twice) before mixing with the other ingredients, as this will aerate the flour and help you achieve fluffy scones.&nbsp;
<h3>How to make moist scones which rise well</h3>
Nobody wants a crumbly scone, so to avoid this make sure that you follow the ingredient measurements precisely to ensure that there is enough liquid used in the mix. Try not to over-handle, treat the dough gently (kneading with light pressure) and don’t overmix or overbake as this will result in a tough and crumbly scone.

We like ours with icing and sprinkled with hundreds &amp; thousands, but you can get creative and try fairy cakes with chocolate chips, lemon drizzle, or <a data-item-id="02f6382a-d0f5-58f7-8c17-0acd82570e30" href="">buttercream icing</a>.
<h3>How to keep your fairy cakes moist</h3>
If your fairy cakes are too dry, you may be baking them for too long, or on too high a heat. We bake ours at 170°C (fan 150°C, gas mark 3) for 15-20 minutes. You should check them after 15 minutes to see if they’re cooked, then put them back in the oven if they aren’t.
You can check to see if they’re done by gently inserting a thin metal skewer into the centre of the cakes - if it comes out clean, they’re cooked through.
<h3>How to make your fairy cakes soft and fluffy</h3>
If your fairy cakes aren’t coming out fluffy, you may need to use more raising agent; in this case, Allinson's Self-Raising White Flour. We also recommend using Silver Spoon caster sugar.&nbsp;Using caster sugar instead of granulated sugar makes all the difference in baking. Thanks to its finer crystals, it dissolves quickly, creating a smooth, airy cake batter that traps more air. The result? A lighter, fluffier sponge with the perfect texture.
<h3>How to make sure your fairy cakes rise</h3>
If your fairy cakes are dipping in the middle, this is likely due to your cake batter being too moist, so it ‘collapses’ once you bake it. You may also have your oven on too low a temperature, which will cause your cupcakes to bake unevenly.
You should also avoid opening the oven door once your fairy cakes are baking, as this releases the heat from the oven, which can also cause them to sink.
