About the bake
This lovely tea bread is so simple to make and the combination of tea and raisins makes a delicious yet 'not-so naughty' treat if you are watching those calories.
Method
Step 1:
Place the raisins in a bowl and pour over the tea, then leave to soak for 1-2 hours.
Step 2:
Preheat the oven to 180°C (160°C fan, gas mark 4). Line a 900g (2 lb ) loaf tin with baking parchment.
Step 3:
Add the flour, baking powder, Half Spoon sugar and eggs to the raisins and tea and beat until smooth.
Step 4:
Pour into the tin and bake in the oven for 45 minutes or until a skewer comes out cleanly.
Step 5:
Allow to cool for 15 minutes in the tin, then turn out and allow to cool on a wire rack.
Step 6:
This cake will keep for 1 week in a cake tin.

Lovely, have tweaked and made this using Earl Grey Tea, and replacing raisins with chopped apricots, yummy! and around half the sugar of raisins! lovely treat. x
Lovely cake. I did it with one teaspoon of sugar by mistake originally & you really don’t need any more,
Tried making this and it was great tasting, however it's still just as "naughty" as having the actual thing. You're only saving yourself about 40 calories (in fat) per slice. Although this recipe is delicious, it still comes up to around 250 calories per slice. I tried making this again with half the amount of raisins and substituted 70% of the sugar for a calorie free sweetener, which made each slice come to 186 calories. It didn't taste as good and artificial sweetener isn't everyone's favourite but it still satisfied my craving! If you have the time and money to experiment, you could probably cut more of the calories by using flour alternatives as that makes up for the biggest bulk of the calories. Regardless! this is a great recipe especially for those trying to cut on their caloric intake.
Easy to make, delicious just putting my 3rd in oven
Easy Just put the 2nd one I've made in oven, first one was delicious. If diabetic and and like cake it fits the bill.
