Method
Step 1:
Preheat the oven to 180°C (160°C fan, 350°F, gas mark 4). Line the flat baking sheet with parchment paper.
Step 2:
Place the butter, sugar and syrup in a large pan and warm over a moderate heat until the sugar is melted.
Step 3:
Remove from the heat and add the flour, bicarbonate of soda, oats, cinnamon, raisins, dried cranberries and ginger.
Step 4:
Add the egg and water and mix thoroughly. Leave until cool enough to handle.
Step 5:
Dampen your hands and shape the mix into 18 flattened balls. Place on the baking sheet allowing plenty of room for the biscuits to spread. You may need to bake in batches.
Step 6:
Bake for 12-15 minutes or until golden brown and still a little soft. Leave to cool and serve.

- 1 tsp Cinnamon

- 1 Stem ginger (ball, finely chopped)
- 1 Egg(s) (free range) (beaten)
- 2 tbsp Water (boiling)

Just made these and they turned out delicious. Changed a few ingredients to use up pantry stores. Used plain flour instead of wholemeal flour and chopped dried apricots instead of cranberries. Very tasty!

Made these today. Turned out pretty good just like I expected.
Pretty straight forward recipe which you can hair if you need to. I measured all the ingredients with using a digital kitchen scale.
Made a few changes becos of lack of ingredients in the pantry. Added roasted fruit and nut museli and placed them in a good processor to make them into quick oats. plus I added shredded coconut. for extra flavor. Baked for 15mins.
Definitely dampen your hands this helps a lot. and re dampen if needed. I
Flattened them with the back of a measuring cup. Tip.... dip the back of the cup in water so the cookie dough doesn't stick.
