Method
Step 1:
Preheat the oven to 180°C (160°C fan, 350°F, gas mark 4). Line the flat baking sheet with parchment paper.
Step 2:
Place the butter, sugar and syrup in a large pan and warm over a moderate heat until the sugar is melted.
Step 3:
Remove from the heat and add the flour, bicarbonate of soda, oats, cinnamon, raisins, dried cranberries and ginger.
Step 4:
Add the egg and water and mix thoroughly. Leave until cool enough to handle.
Step 5:
Dampen your hands and shape the mix into 18 flattened balls. Place on the baking sheet allowing plenty of room for the biscuits to spread. You may need to bake in batches.
Step 6:
Bake for 12-15 minutes or until golden brown and still a little soft. Leave to cool and serve.

- 1 tsp Cinnamon

- 1 Stem ginger (ball, finely chopped)
- 1 Egg(s) (free range) (beaten)
- 2 tbsp Water (boiling)

Very tasty
Tried to recreate a crunchie biscuit bought from a farm shop so exchanged 250gm oats for 150gm oats and 100gm coconut also exchanged the fruit using 100gm sultanas and 100gm mixed peel. It was just like the ones I bought - delicious
Delicious! I used dried apricots, walnuts and sultanas as I didn't have cranberries and it worked just as well. Will try with cranberries another day as they were a complete success! I made more than 18 so they were not as big and baked them for a little longer as otherwise more cookie than biscuit.
Perfect! I doubled the recipe but halved the sugar (175g coconut sugar, everything else doubled), added coconut instead of raisins and it came out great! Thank you
So yummy! I leave out the dried fruit and add coconut instead
Just made these and they turned out delicious. Changed a few ingredients to use up pantry stores. Used plain flour instead of wholemeal flour and chopped dried apricots instead of cranberries. Very tasty!
