Method
Step 1
Before you start:
Pre-Heat the oven to 180c/160c Fan/gas 4.
Pop 6 of the muffin cases into the cupcake tray.Step 2
In a large bowl, mix together the softened butter, caster sugar, flour and cocoa blend, eggs and milk with a spoon. Once combined, spoon the mixture into the paper cases until ¾ full and bake for 25 - 30 mins.
Step 3
To check your cupcakes are baked throughout, insert the tip of a knife into the sponge. If ready, the knife will be clean when removed. Cool in the cases on a wire rack.
Step 4
Make the buttercream by mixing the icing sugar, butter and milk, until smooth
Step 5
Once cooled, take a cutlery knife and cut a small hole, 1-2cm deep in the middle of each muffin. Fill each hole with sprinkles, then replace the cake with buttercream, using the back of a spoon to create a swirl.

(For the icing) Just add:
- 35gSoftened butter
- 1/2 tbspMilk
