Discover Baking Kit: Chocolate Cookie Sandwiches

Before you start:
Pre-Heat the oven to 180c/160c Fan/gas 4.
Cover 2 baking trays with baking parchment.

Mix the caster sugar and butter in a large bowl until pale and fluffy.  Add the egg and mix well.  Then, add the flour and cocoa blend and stir until everything is combined.

Use a teaspoon to measure out 18 balls of dough onto both baking trays, leaving space between each ball for your cookies to expand in the oven.

Put your trays in the oven and bake for 7-8 mins (don’t worry if they look squidgy).  Leave to cool (and harden) on the trays for 10 mins, then transfer onto a cooling rack until cold to touch.

Make the buttercream by mixing the butter and icing sugar together with a splash of milk.  Once the cookies are cool, out 1tsp of buttercream in the middle of the cookie sandwich with another cookie on top.  To finish, decorate with sprinkles around the buttercream edges.
