These adorable individual strawberry sponge puddings are perfect for a dinner party to impress friends and family. They are also the ideal size for a kids party. The Billington’s unrefined golden caster sugar make this sponge extremely light with a subtle buttery taste.     Method

    1. Step 1

      Preheat the oven 180°C (160°C, gas mark 4)

    2. Step 2

      Grease 6 small ramekins with butter and layer the bottom with the halved strawberries.

    3. Step 3

      Beat together the sugar and butter until soft and pale in texture and colour.

    4. Step 4

      Beat in the eggs one at a time, then gently fold in the flour.

    5. Step 5

      Pour the mixture over the strawberry base and bake the puddings for 20-25 minutes until the top is golden brown.

    6. Step 6

      Remove from the oven and serve.
