Method

  1. Step 1:

    Whizz up the biscuits into a crumble, then add in the melted butter. Stir until thoroughly coated and tumble into an 8 inch cake pan with a removable base and refrigerate for 10 minutes.

  2. Step 2:

    For the filling, whisk the double cream, icing sugar, rose extract and vanilla until you get stiff peaks

  3. Step 3:

    Gently fold in the room temperature cream cheese until combined.

  4. Step 4:

    Tumble in the crushed meringue, pomegranates, rose extract and chopped Turkish delight into the cake tin, use a spatula to level off the cheesecake and then set in the fridge to set overnight ideally.

  5. Step 5:

    For the decoration top the cheesecake with Turkish delight pieces, meringue kisses, pomegranate and some gold leaf for that extra exuberant decoration for Eid. Top with fresh rose petals and serve.

  • For the Base

    • 300g Digestives
    • 150g Salted Butter (melted)
  • For the Cheesecake Filling

    • 500g Full Fat Cream Cheese
    • 100g Billington's Unrefined Golden Icing Sugar (sifted)
    • 300ml Double Cream
    • 1 tsp Nielsen-Massey Vanilla Extract
    • 100g Pomegranate Seeds
    • 1 tsp Rose Extract
    • 50g Crushed Meringue Kisses
    • 50g Turkish Delight (chopped)
  • For the Decoration

    • 200g Turkish Delight
    • Extra Meringue Kisses
    • 50g Pomegranate
    • A few flakes Edible Gold
    • 2 Pink Rose Buds
