Why not try making some apricot jam, try something different away from the usual summer fruits.

Method

  1. Stone and cut the apricots into small pieces, and crush thoroughly, do not peel the fruit.

    • 900g Apricot(s) (ripe)
  2. Put the fruit in a pan with the sugar, heat gently stirring occasionally until the sugar has dissolved.

    • 1.35kg White Granulated Sugar (we like Silver Spoon)
  3. Bring quickly to a full rolling boil and boil rapidly for 1 minute, stirring occasionally.

  4. Remove from the heat and stir in the apple pectin.

    • 125ml Apple Pectin
  5. Skim, pot and cover in the usual way.
