It's light and not too sweet, perfect for those of you who prefer a treat which doesn't leave you feeling like you've overindulged afterwards. Method Preheat the oven to 180°C, fan 160°C, gas 4. Lightly butter a 900g (23 x 13cm) loaf tin. Line the tin with baking paper making sure you have some excess paper over the sides. This makes it easier to remove the loaf from the tin. Using either a hand-held electric or a free-standing mixer, beat together the butter, sugar, eggs, yoghurt and lime zest and juice, (reserving some lime zest for the top) until you get a smooth mixture. Mix the flour, desiccated coconut and ground almonds. Add to the butter and sugar mix and whisk until well combined. Fold through the chocolate chips and spoon into the tin. Sprinkle over the remaining chocolate chips. Bake for 1 hour–1 hour 10 minutes or until cooked when tested with a skewer. Allow the loaf to cool in the tin for 10 minutes before turning it out onto a wire rack to cool completely and top with the remaining lime zest. I personally would reduce the sugar amount and!or omit the choc chips but i absolutely loved this, as did my kids! Thank-you so much for this recipe 20 May 2020 5 star rating Love this cake, when I first made it I didn't have grounded almond so added more coconut and extra choc chips...and it still turned out fantastic... moist, great flavour and family loved it.. I actually have one in the oven now, this time with Grounded Almonds included 😉 08 May 2020 4 star rating Great, easy to follow recipe, definitely be making again! 25 April 2020 5 star rating Not too sweet, moist and lovely combination of flavours- will definitely do this one again.
