About the bake

This tray bake is a perfect bake to serve warm as a pudding with a scoop of ice-cream. Why not sprinkle on some flaked almonds or add a pinch of ground cinnamon to the flour?

    Method

    1. Step 1

      Pre-heat the oven to 180°C (gas mark 4). Grease a shallow baking tin 28x18x4cm (11x7x1½).

    2. Step 2

      Mix the flour, oats and sugar in a bowl. Rub in the butter until the mixture resembles bread crumbs.

    3. Step 3

      Evenly spread half the mixture over the base and gently press.

    4. Step 4

      Spread the cherries over the oaty base. Cover with the remaining oat mixture and press down.

    5. Step 5

      Bake for 25 minutes until golden brown.

    6. Step 6

      Leave to cool in the tin. Cut into 12 piece and serve.

      • 75gSelf-raising wholemeal flour 
      • 75gPorridge oats 
      • 75gBillington's unrefined demerara sugar 
      • 100gUnsalted butter (softened) 
      • 100gBillington's glacé cherries 

    Utensils

    • 28 x 18 x 4 cm or 11 x 7 x 1.5in tin
    • Bowl
