About the rocky road

Is there anything more simple yet satisfying than a generous slice of rocky road? Jam packed with Mini Eggs, marshmallows, and biscuits smothered in chocolate, what's not to love! These super easy Easter Egg Rocky Road bites are perfect for you and your family to whip up in the kitchen over Easter, and are a great way to use up any un-eaten chocolate. 

We've made ours with Cadburys Creme Eggs, Mini Eggs and even Oreo Eggs - but you can use up anything you fancy in this recipe, so go crazy filling this rocky road with your favourite chocolate eggs.

    Method

    1. Step 1

      Line a square tin with greaseproof paper. A standard brownie tin would be ideal.

    2. Step 2

      Break the milk chocolate into chunks and place them in a bowl above a saucepan of boiling water. Gently melt, stirring occasionally to ensure all the chunks are melted.

      • Milk chocolate (500g)
    3. Step 3

      Whilst the chocolate is melting, put the marshmallows, broken up digestive biscuits, fudge chunks and creme eggs into a bowl and give it a mix so they are evenly distributed.

      • Mini marshmallows (100g)
      • Digestive biscuits (100g)
      • Creme eggs (broken) (4)
      • Fudge pieces (50g)
    4. Step 4

      Once all the chocolate has melted, pour in the bowl of ingredients and give it a good mix - work quickly as it sets very quickly! Pour the mix into the tin.

    5. Step 5

      Now, add the mini eggs into the mixture so that they are still visible from the top.

    6. Step 6

      Place the tin in the fridge and they will be ready to eat within 2-3 hours.

    7. Step 7

      Cut into bitesize pieces and serve.

    Yum! We needed ours gluten free so used rice krispies instead of biscuits. And put one 100g pack of micro eggs in the mix, and sprinkled another pack on top! Didnt stay around very long!
