About our funfetti shortbread biscuit recipe

These funfetti shortbread biscuits not only look bright and colourful they also taste delicious too, with flavoursome hints of vanilla. A great one to share at your next coffee morning.

    Method

    1. Step 1

      Preheat the oven to 180°C (fan 160°C, gas mark 4)

    2. Step 2

      Sift flour into a bowl with the sugar. Chop the butter into cubes and then add it to the bowl of flour and sugar. (Cubing the butter first will help you in the next step).

    3. Step 3

      Rub the butter into the flour and sugar with your finger tips. When the dough begin to form shape, add a few drops of vanilla extract and knead in some of the sprinkles. These may fade in colour when baked depending on the type of sprinkles that you use. 

    4. Step 4

      Roll the dough out on a lightly floured surface and use the star cutters to cut out shapes. 

    5. Step 5

      Place on the baking sheet and chill in the fridge for 30 minutes before baking for 15-20mins. When golden, remove from the oven and leave to cool on a cooling rack.

    6. Step 6

      Once the biscuits are fully cooled, melt the white chocolate and dip each biscuit halfway into the chocolate. Decorate with sprinkles on top of the melted chocolate and leave aside to set.

      • 200gUnsalted butter (softened) 
      • 100gBillington's Unrefined Golden Caster Sugar 
      • 1 1/2 tspNielsen-Massey Vanilla Extract 
    • For the Decoration

      • 150gWhite chocolate 
      • 80gColoured sprinkles
