Easter is one of our favourite baking occasions and who doesn't love an iced Easter biscuit. This Easter biscuit recipe is so simple everyone can get involved with the baking, decorating...and most importantly the eating!

  1. Step 1:

    Preheat the oven to 180°C (160°C fan, gas mark 4). Lightly grease 2-3 baking trays.

  2. Step 2:

    Cream the butter & sugar, until light & fluffy.

  3. Step 3:

    Add the egg yolk in and mix before folding in the flour and spices.

  4. Step 4:

    Make the mixture into a dough & chill for 30 mins.

  5. Step 5:

    Roll out the dough on to a lightly floured surface, ¼ inch thick and cut out Easter shape biscuits using a variety of biscuit cutters.

  6. Step 6:

    Place on a baking sheet and bake for 8 minutes.

  7. Step 7:

    To decorate make up the icing as directed on the packet. Once the right consistency is achieved split into batches and colour the icing, dipping a cocktail stick into the desired colours and mixing well into the icing mixture.

  8. Step 8:

    Decorate each biscuit with a different design – the biscuit should have a full covering of icing. 


  • For the biscuits

    • 100g Unsalted butter (softened)
    • 75g Silver Spoon Caster Sugar
    • 1 Egg yolk
    • 200g Plain Flour
    • 1 tsp Nielsen-Massey Vanilla Extract
    • 1 tsp Mixed spice
    • 1/2 tsp Cinnamon
  • For the icing

    • 200g Silver spoon royal icing sugar
    • variety Food colouring (various colours)
