About the bake

These vanilla biscuits are really tasty and great fun to bake and decorate with the family during the Easter period. Unleash your creative side and get busy with the icing. This recipe was created by Gizzi Erskine.

    Method

    1. Step 1

      Sieve the flour, baking powder and salt into a bowl and set aside.  In a large bowl cream the butter and sugar until pale.  Beat in the egg and vanilla extract.  Add the flour to the butter mix and mix until the dough is formed.

    2. Step 2

      Wrap the cookie dough in cling film and chill for at least one hour.

    3. Step 3

      Preheat the oven to 170°C (150°C fan, gas mark 3).  Roll the dough out on a lightly floured surface to about 0.5cm.  Cut out the cookies and transfer to baking sheets.  Roll up the trimmings and repeat stages above to make more cookies.

    4. Step 4

      Bake for 8 – 12 minutes until golden.  Remove and transfer to a cooling wire and leave until completely cool before decorating.

    5. Step 5

      Make up the icing as directed on the packet. Once the right consistency is achieved split into batches to make different coloured icings.

    6. Step 6

      Dip a cocktail stick into the desired colours and mix well into the icing mixture.

    7. Step 7

      Place into piping bags with a plain fine nozzle.

    8. Step 8

      Pipe the outlines of the biscuits and allow to set slightly.

    9. Step 9

      Spoon the rest of the icing over the biscuit or pipe into the outline.

    10. Step 10

      Decorate as desired with writing icing.

      • 450gRoyal icing sugar

      • Writing icing
