This gorgeous mini peanut butter cookies recipe have a delicious caramel flavour from the muscovado sugar which combines beautifully with the peanut butter to make the ideal lunch box treat.

Method

  1. Preheat the oven to 170°C (fan 150°C, gas mark 3) and line 2 baking trays with baking parchment.

  2. In a large bowl cream together the butter and sugar until pale and fluffy, then add the egg and vanilla extract and mix well.

    • 125g Butter (unsalted)
    • 195g Unrefined light muscovado sugar
    • 1 Egg(s) (free range) (medium)
    • 1 tsp Vanilla extract
  3. Sift the flour, baking powder and bicarbonate of soda and add in two batches, mixing thoroughly then stir in the peanut butter until evenly mixed.

    • 195g Plain white flour
    • ½tsp Bicarbonate of soda
    • ½tsp Baking powder
    • 300g Peanut butter (smooth)
  4. Take small pieces of the dough, about 1 inch round and roll into balls, place these on the baking sheets leaving space between them as they will spread out during baking. Press the balls down ever so slightly with the back of a spoon.

  5. Place in the oven and bake for 10 minutes until they start to crack on top and are golden brown in colour. Leave to cool on the trays for about 10 minutes then transfer onto a cooling wire to cool completely.

  6. If you would like, finish by topping each cookie with an extra spoonful of gooey peanut butter.
