Looking for a sweet fix without having to put your oven on? Try this yummy rocky road fridge cake recipe taken from Eric Lanlard’s book Home Bake.

Method

  1. Grease an 18cm (7in) square baking tin with extra butter, and line, base and sides with baking paper.

  2. Melt the chocolate in a heat proof bowl over a pan of simmering water. Melt the butter and mix into the melted chocolate, and leave to cool for 10 minutes.

    • 200g Milk Chocolate (Broken into Pieces)
    • 100g Unsalted Butter
  3. Stir the crushed cookies, mini marshmallows, cherries and sultanas into the cooled chocolate mix. Spoon the mixture into the prepared tin, press down and allow to cool, then chill for at least 2 hours until fully set.

    • 200g Chocolate Chip Cookies (Lightly Crushed)
    • 100g Mini Marshmallows
    • 100g Glacé Cherries (We use Billington's)
    • 100g Sultanas
  4. Once set, cover the top with a mixture of marshmallows, cherries and chocolate chips, and drizzle with melted white chocolate. When set once more, slice into 16 squares.

    Really straightforward recipe and good one to do with young children. Next time we'll use slightly less chocolate chip cookies.
