This traditional shortbread is baked using Silver Spoon Stevia Blend Caster Sugar. The stevia blend means the calorie intake is reduced by 1/3 without compromising on taste or texture. These are flavoured using Nielsen Massey vanilla extract, or choose lemon extract for a tasty alternative.
Preheat the oven to 180'c and grease a baking sheet.
Sift together the flour a into a bowl.
Beat the butter and Stevia blend until soft. Add a few drops of vanilla (or lemon) extract and then add the sifted flour. Bring together to form a dough.
Roll the dough out to about 1cm thickness and cut into rectangles (Or any shape you like) . Carefully transfer the rectangular fingers to the baking tray.
Bake for 15 minutes. When golden, remove from the oven and leave to cool on a cooling rack. Sprinkle with stevia blend for decoration.
