This traditional shortbread is baked using Silver Spoon Stevia Blend Caster Sugar. The stevia blend means the calorie intake is reduced by 1/3 without compromising on taste or texture. These are flavoured using Nielsen Massey vanilla extract, or choose lemon extract for a tasty alternative.

Method

  1. Preheat the oven to 180'c and grease a baking sheet.

  2. Sift the flour into a bowl.

  3. Beat the butter and Stevia blend until soft. Add a few drops of vanilla (or lemon) extract and then add the sifted flour. Bring together to form a dough.

  4. Roll the dough out to about 1cm thickness and cut into rectangles (or any shape you like). Carefully transfer the rectangular fingers to the baking tray.

  5. Bake for 15 minutes until golden. Remove from the oven and leave to cool on a cooling rack. Finish with a sprinkle with stevia blend for decoration.
