Fairy cakes are a great recipe to introduce your children to baking and are a fun activity for the whole family to enjoy together. Let your creativity run wild when decorating.

Method

  1. Preheat the oven to 170°C (fan 150°C, gas mark 3). Line a muffin tray with 10-12 paper cases.

  2. Beat together the butter and sugar, then add in the eggs one at a time mixing between each addition. Add the vanilla extract.

    • 100g Butter
    • 100g Silver Spoon Caster Sugar
    • 2 Eggs
    • 1 tsp Nielsen Massey Vanilla Extract
  3. Carefully fold in the flour until just incorporated.

    • 100g Allinson Self-Raising White Flour
  4. Spoon the mixture into the paper cases and bake for 15-20 minutes until golden on top. Insert the tip of a knife into the cases to check that they are baked throughout. If they are ready the knife should be clean when removed from the sponge.

  5. Allow to cool on a rack.

  6. To make the icing, add a few drops of water to the icing sugar until the consistency becomes smooth and glossy. Add more water if needed, or if the icing becomes too runny add a touch more icing sugar to thicken.

    • 150g Silver Spoon Icing Sugar
  7. Spoon the icing on to each cake and decorate with a handful of coloured sprinkles.

I am 9 and I made these cakes on my own! They are a brilliant recipe and an easy step by step process. I did not have any caster sugar or un salted butter so I used salted butter and brown sugar. Worked amazingly I loved them!

Easy to do just made my first lot of cakes

Sadly didn't rise as much as I wanted them to, they are quite soggy and underdone. Try to put them into the oven for a longer time as they take quite a long time to cook. They only made 8 so try to double the recipe. I am quite disappointed but maybe they will be better next time

Simple recipe but delicious! Having read the previous comments, and as I was using larger cupcake cases, I increased the ingredients by 50%.....150g of butter, sugar and flour, 3 tsps vanilla extract and 3 eggs. The mixture made 12 well risen cakes, perfect for butterfly fairy cakes.

Just make the cakes there, they turned out lovely. I had no caster sugar and substituted granulated sugar and I spread over 12 cases but should have just made 9 or 10 and so would have been bigger. Smelled amazing while cooking and taste deli

  38. 5 star rating

Not only are these really easy to make but they also taste really nice, I managed to get 12 normal sized cupcakes out of the mixture. One of the best recipes I’ve done for a long time

  47. 5 star rating

Really quick to make. Surprisingly easy and simple.

  48. 5 star rating

Perfect for a quick bake and fun for novice bakers and experts alike! They turned out perfectly, although a little more mixture is not a crime! You might want to increase the measurements if your doing about 12, but fun and easy. They are very tasty and the icing is super quick! This is our first time using this recipe and this website, and we look forward you using this site and recipe again! If you are putting a tiny bit of baking powder in you might want to not do as much mixture. The only reason to increase the amounts is if you want more cakes, and if when your putting them in the cases, don’t be fooled if they look a bit low, they do turn out big!!!!! Love the recipe and hope others use it, 😀😀😀😀😉😉👩‍🍳🧑‍🍳🧁🧁🧁
