Needing nothing but a mixing bowl, lined baking tray and a fridge - this 'chuck-it-all-in' no bake Rocky Road recipe is simple to make and even simpler to scoff. We can't promise it'll be around for long. Stuffed full of marshmallows, biscuits and glacé cherries, coated generously in rich plant-based chocolate this easy Rocky Road is perfect for picnicking or parties.

    Method

    1. Step 1

      Grease an 18cm (7in) square baking tin with extra margarine, and line, base and sides with baking paper.

    2. Step 2

      Melt the chocolate in a heat proof bowl over a pan of simmering water. Melt the margarine and mix into the melted chocolate, and leave to cool for 10 minutes.

      • 200gDark chocolate (vegan)
      • 100gDairy free margarine
    3. Step 3

      Stir the crushed biscuits, mini marshmallows, cherries and sultanas into the cooled chocolate mix. Spoon the mixture into the prepared tin, press down and allow to cool, then chill for at least 2 hours until fully set.

      • 200gChocolate chip cookies (lightly crushed)
      • 100gVegan Marshmallows
      • 100gBillington's glacé cherries
      • 100gSultanas
    4. Step 4

      Once set, cover the top with a mixture of marshmallows, cherries and chocolate chips, and drizzle with melted dark chocolate. When set once more, slice into 16 squares.

      • 35gDark chocolate (melted) 
      • 50gGlacé cherries 
      • 50gDark chocolate chips
