  1. Step 1:

    Put the flours, sugar, salt and yeast into a bowl.

  2. Step 2:

    Mix to a soft dough with the water.


  3. Step 3:

    Turn onto a floured surface and knead for 10 minutes. Shape as desired and put into an appropriate greased loaf tin.

  4. Step 4:

    Cover and leave to prove until double in size.

  5. Step 5:

    Brush with warm water and bake in an oven preheated to 220 C (fan 200 C, gas mark 7) and immediately turn the heat down to 200 C (fan 180 C, gas mark 6).

  6. Step 6:

    Bake for 30-35 minutes.


    • 75g Very strong wholemeal bread flour
    • 375g Very strong white bread flour
    • 1.5 tbsp Unrefined golden granulated sugar
    • 1.5 tsp Salt
    • 1.25 tsp Easy bake yeast
    • 260ml Warm water
