You'd never believe these gorgeously sweet chocolate muffins are gluten free but they are! Go on, give them a try...

Method

  1. Set the oven to 180°C (160°C fan, gas mark 4). Line a muffin tray with 9 paper muffin cases.

  2. Place the flour, cocoa powder and baking powder in a bowl.

  3. In another bowl, beat the butter and sugar together until light and creamy. Gradually beat in the eggs, then stir in the flour mixture, chocolate chips and milk.

  4. Divide the mixture between the baking cases and bake for about 20 minutes or until the muffins are just firm to the touch.

  5. Allow to cool. These muffins will keep for three days in an airtight container.

I followed the recipe, but the muffins were very dry,my boys make lots of mess eating them, not sure what went wrong...All ingredients were room temperature, oven preheated, they looked lovely, but very dry. It's really hard to find a good recipe,to make gluten free taste delicious,in a way that it tastes fresh and you don't need a sip of cuppa after every bite.

Although these were lovely and choclatey I found them to be rather dry. Does anyone have any suggestions as to what I might have done wrong?

Love them. Make them often now. Shall. Pop a chicken on top once cool, for Easter.

These are really good. My little boy is really fussy with his cakes that are GF as some taste “metallic” to him, these are amazing, so chocolatey and light and just yummy!

My little boy is a gluten intolerant and he is really fussy with how things taste as some cakes have a “metallic” taste he says. I know what he means as I taste it but these are really good and don’t have that nasty twang to them. These are just yummy! Thanks for the recipe

Excellent recipe. Well risen muffins and very light. Delicious taste. I used well chopped cooking chocolate and skimmed milk as had no full milk. Will certainly be making again.

Found these light but, quite dry and they didn't rise above the paper cases so looked more like fairy cakes.
