How to make Air Fryer Iced Doughnuts

Method

  1. Step 1:

    Put the flour, sugar, salt and yeast into a stand mixer bowl with a dough hook, stir to combine then pour in the milk, melted butter, egg and vanilla bean paste. Mix on a medium speed for 5 minutes until the dough comes together. If you do not have a mixer knead by hand for 10 minutes.

  2. Step 2:

    Transfer the dough to a bowl greased with oil, cover with a lightly oiled piece of cling film and leave in a warm place to prove and rise for about an hour or until doubled in size. 


  3. Step 3:

    Next, roll out the dough on a lightly floured surface to a 6mm thickness. Cut out 6 rounds using an 8cm round cutter, then use a 4cm round cutter to remove the centre of each doughnut. 

    Keep the centres as they can also be made into doughnut balls and tossed in sugar when cooked. Any trimmings of dough can also be rolled into balls.

  4. Step 4:

    Place the doughnuts on a tray lined with lightly oiled cling film then cover with another piece of lightly oiled cling film and leave in a warm place to rise for about 30 minutes.

  5. Step 5:

    When ready to cook, set the air fryer temperature to 180C and preheat following the manufacturer’s instructions. Carefully place 3-4 doughnuts (depending upon the size of your air fryer basket) into the basket. 

    You may need a piece of air fryer parchment paper depending on the type of air fryer you are using. Leave space between the doughnuts as the dough will rise.

  6. Step 6:

    Cook each batch of doughnuts for 5-6 minutes, until golden.  Carefully turn the doughnuts halfway through cooking to ensure that they brown evenly.

  7. Step 7:

    Carefully remove the doughnuts from the basket using a silicone spatula and transfer to a wire rack to cool. Repeat until all the doughnuts are cooked including the doughnut centres which will only take 3-4 minutes to cook.

  8. Step 8:

    Meanwhile, prepare the vanilla icing; sieve the icing sugar into a mixing bowl and gradually add enough water along with the vanilla bean paste mixing well, to produce a smooth, spreadable icing.

  9. Step 9:

    When the doughnuts have cooled drizzle over the icing and top with some sprinkle decorations.

Ingredients

  • For the air fryer doughnuts

    • 300g Allinson's Strong Bread Flour, plus extra for rolling
    • 60g Billington's Unrefined Golden Caster Sugar
    • 7g Allinson's fast-action dried yeast
    • 1/4 tsp Fine sea salt
    • 125ml Whole milk (warmed)
    • 40g Butter (melted)
    • 1 Medium free range egg (lightly beaten)
    • 2 tsp Nielsen-Massey Vanilla Bean Paste
    •  Vegetable oil in a spray bottle
  • For the vanilla icing

    • 125g Silver Spoon Icing Sugar
    • 1 tsp Nielsen-Massey Vanilla Bean Paste
    • 2 tbsp Water
    •  Sprinkles
