About the bake

This banana & honey bread goes perfectly with a cup of coffee or tea mid morning or afternoon. It's rich in flavour and is deliciously moist but isn't too sweet. We've added some dark chocolate chunks to ours, but you can add chopped pecans, or dark chocolate, or both!

  1. Step 1:

    Pre-heat the oven to 180C/160C fan and line a standard loaf tin.

  2. Step 2:

    In a large bowl beat together the oil and honey with a whisk. Add in the eggs, vanilla, milk and beat again until well combined. Mix in the mashed banana and set aside.

  3. Step 3:

    In a separate bowl sift together the flour, bicarbonate of soda and salt before folding into the wet mix. Only mix until combined, try not to overmix. Gently fold in your chosen addition (we have used Dark chocolate chunks) and again mix until just combined.

  4. Step 4:

    Pour the mixture into the prepared, lined loaf tin and cook in the oven for approx. 45- 50 minutes or until a skewer comes out clean when inserted into the middle. Remove from the oven and allow to cool on a rack. Once cooled decorate with banana chips before serving.    


  • For the Loaf

    • 65g Vegetable oil
    • 180g Billington's dark & rich honey
    • 2 Eggs (medium)
    • 2 Very ripe bananas (mashed)
    • 65ml Semi-skimmed milk
    • 1 tsp Nielsen-Massey Vanilla Extract
    • 260g Allinson's Self Raising Flour
    • 1 tsp Bicarbonate of soda
    • 0.5 tsp Salt
    • 100g Dark chocolate chunks or chopped pecans (optional)
  • To Decorate

    • 6 Banana slices (optional)
