Cherry jam is perfect for making in the summer when cherries are in season.

Method

  1. Step 1:

    Simmer the cherries in the water and lemon juice in the covered pan for 15 minutes.

  2. Step 2:

    Add the sugar and heat gently, stirring occasionally until the sugar has dissolved.

  3. Step 3:

    Bring to a full rolling boil and boil rapidly for 1 minute

  4. Step 4:

    Stir in the apple pectin and continue boiling for 1 minute.

  5. Step 5:

    Remove from the heat, skim if necessary, cool slightly, pot and cover.

Ingredients

  • For The Jam

    • 1.1kg Cherries (stoned)
    • 120ml Water
    • 3 tbsp Juice of one whole lemon
    • 1.4kg Silver Spoon White Granulated Sugar
    • 250ml Apple pectin
