How to make challah bread

What is challah bread?

Challah bread is traditional Jewish bread, often eaten at holiday times. The bread has a lovely sweetness with the added raisins and honey. This is a simple challah bread recipe, as it uses a bread maker to create the dough.

What makes challah bread different to normal bread?

Challah is unique to other breads, as it doesn't contain any dairy to keep it kosher. It is also braided which gives it its interesting appearance. Challah is a sweet bread rather than savoury, usually containing raisins and honey.

How is challah bread different to brioche?

Challah is a yeast bread that is enriched with eggs, similar to brioche. The biggest difference between challah bread dough and brioche dough is that brioche contains a lot of butter and sugar, while challah is made with oil. Even though challah bread is made without sugar, it is still delicious and sweet due to the sweetness of added raisins and honey.

How should I eat challah bread?

Challah bread is often enjoyed on major Jewish holidays. As it is drizzled with honey, it can be eaten on its own an enjoyed as a sweet snack. You can also try toasting it, using it to make French toast, or even a bread pudding.

  1. Step 1:

    Add ingredients for the dough to the bread maker in the order specified by your machine. Some may have a separate compartment for the raisin addition. Set to a basic dough programme.

  2. Step 2:

    Line a large baking tray with non-stick parchment. Tip out the dough onto a lightly floured surface and knead gently just until all the air is knocked out.

  3. Step 3:

    Divide into three equal pieces before rolling out each piece into a sausage, approximately 23 cm long. Join the ends of each piece at the top and plait down until you reach the end.  Tuck the ends under to finish and neaten. Transfer the plait to the baking tray and brush with the beaten egg.

  4. Step 4:

    Loosely cover with oiled clingfilm or a clean tea towel before leaving in a warm place to prove until risen and doubled in size. Preheat your oven to 200°C (fan 180˚C fan, gas mark 6).

  5. Step 5:

    Bake the bread for 25-30 minutes or until it sounds hollow when the base is tapped. Leave to cool or tuck into when still slightly warm if you can’t wait! Best eaten fresh or within a few days.


    • 200ml Water
    • 75ml Sunflower oil
    • 400g Very strong white bread flour
    • 1.25 tsp Sea salt
    • 75ml Honey
    • 1 Easy bake yeast sachet
    • 150g Raisins
  • For the egg wash
