This carrot cake tray bake recipe is really easy and quick to make.  We've turned a classic tea time treat into a tray bake versoin and then smothered in cream cheese frosting. If you can stop at just the one slice, then you deserve a medal.

Method

  1. Preheat your oven to 180ºC/160ºC fan/gas 4.

  2. Grate the carrots into a large bowl. Sift the sugar, flour, bicarb and cinnamon on top of the carrot and mix.

  3. Whisk together the eggs and oil and add to the bowl.

  4. Line your baking tin with greased proof paper and then pour in the batter.

  5. Bake in the oven for 30 minutes or until the cake is cooked. Wait for the cake to cool thoroughly before icing it.

  6. To make the icing, mix the butter and icing sugar together, then stir in the soft cheese until smooth. Be Careful not to overmix once you've added the cream cheese! Otherwise it'll go runny.

  7. When the cake is cool, spread the top with the icing and carrot toppers and serve.

Very easy simple recipe.. tastes good. But I think I would add some some Sultanas and orange zest next time

OMG I love this recipe. I made it today and made double to give some round to my neighbours (self distancing of course). It was very quick and easy, and was really moist. I would add some chopped walnuts to it next time and a little more icing sugar to the frosting.

Going to try this later but I will be a MUCH happier locked-down cook when I can find the recipe that uses cups instead of weights!
