Fold the dough back over itself, give it a quarter turn, and repeat the pressing motion. Continue this rhythm, adding flour as needed to prevent the dough from sticking.</p>
<p>Knead for about 10 minutes until the dough is smooth and elastic. To test if it’s ready to bake, poke the dough with your finger; it should spring back.</p>
