Buttermilk Pancakes with Figs & Honey

These delicious buttermilk pancakes are very easy to make and have a lovely smooth vanilla flavour. Serve with fresh figs and a drizzle of your favourite honey.

Method

  1. Sieve the flour, baking powder and salt into a large bowl then add the sugar and stir then make a well in the centre. In a large jug whisk together the buttermilk, melted butter, vanilla and beaten egg.

  2. Slowly add the wet ingredients to the dry, whisking until you have added it all and you get a smooth, thick batter. Leave to rest for 10-15 minutes.

  3. Lightly grease a frying pan with oil and heat on a medium heat, then scoop a rounded tablespoon of batter into the pan. Cook for 1-2 minutes on each side or until golden. The pancakes will start to puff up as they cook.

  4. Transfer to a plate and keep warm whilst you make the rest.

  5. To serve slice the figs into quarters and place 2 quarters with each serving, then drizzle generously with honey.

    I’m going to give these another shot. With that being said they were more like crepes. They were delicious. I loved the fresh figs and honey. We added some chopped pistachios knowing the flavors would go well. They were delicious but I was hoping for pancakes not crepes. I plan on making them again soon to see if I made a mistake along the way.

    These are crepes not pancakes. Terrible!! I tried leaving a very nice 1 star review but it “Unfortunately you haven’t passed our security checks. Please try again.” I said I was going to make these again sometime soon. Now I’m unsure. There are no reviews because they don’t let folks leave them.
