Method
Step 1:
Sieve the flour and baking powder into a large bowl.
Step 2:
Make a well in the middle of the flour and add the egg and milk and whisk until smooth.
Step 3:
Heat a non-stick frying pan and pour in small amounts of batter to make a pancake about 10 cm in diameter. Once the top of the pancake has bubbled and set, turn the pancake over and cook on the other side. Repeat until all the batter is used.
Step 4:
Stack the pancakes in a pile and keep warm.
Step 5:
Heat a non-stick pan and add the apples, apple juice and sugar. Heat until the apples are beginning to soften. Sprinkle the apple with cinnamon and serve on top of the pancakes.

- 1 Free range eggs
- 300ml Semi-skimmed milk

For the Topping
- 2 Bramley apples (peeled, cored & sliced thinly)
- 3 tbsp Apple juice
- 1 tsp Half spoon granulated sugar
- 1 tsp Cinnamon
